SPUMANTE 'PURO' MOVIA 2020 DESCRIPTION
  • Movia's "Puro" is an eternal sparkling wine, an assimilator of energy over time and with the desire to remain constantly alive.
  • The Chardonnay and Ribolla Gialla grapes from which the sparkling wine is obtained grow on Flysch soils of Collio, with layers of marl and sandstone. The "Puro" is born from the late and manual harvest of the grapes, which spend a very short time from the vineyard to the cellar. The alcoholic fermentation is started using only indigenous yeasts, a maceration on the skins for one day is planned, followed by a delicate pressing of the fermenting must, then completed in barrique. The wine from the two grape varieties rests in wooden containers for 4 years to reach full maturity, healthiness and stability. Once assembled, the wine is bottled and refermentation occurs with the sole addition of must from the same grapes and its indigenous yeasts. After a 2
  • year refinement period on the yeasts, no disgorgement or dosing by the cellar takes place. The structure of this incredible sparkling wine is continuously supported by the refinement on the yeasts which occurs constantly over time as the bottle rests upside down on itself. A choice that allows a continuous dialogue between the wine and its sediments. It does not age and renews itself.
  • A special feature to underline: continue to store the sparkling wine upside down. Before serving it, you must make sure that it has been chilled properly. After that, you will need to equip yourself with a basket of iced water in which to perform a real degorgement by immersing the neck of the bottle upside down. In this way the cork will be expelled, with a little help from your hand, and with it all the possible sediments will be eliminated. Be careful, once opened, a brief moment in which the bottle must remain upside down in the water is enough to eliminate the residue; after which you can start serving. Steady hand!
  • The "Puro" to the eye appears straw yellow with a beautiful perlage and characterized by coppery shades. On the nose it is harmonious, you can perceive fruity sensations and salty veils.
