- The Pas Dos Classic Method Sparkling Wine from the South Tyrolean winery Kettmeir is a label that well represents the character of the territory. It has the particularity of being made with a very high percentage of Pinot Bianco, which gives a character of original softness and elegance, integrated by Chardonnay and a small percentage of Pinot Nero. The composition of the assembly, the perfect ripeness of the grapes and the long refinement sur lattes, allows for the creation of a harmonious zero dosage with great taste balance.
- The Metodo Classico Pas Dos was born thanks to the experience of a historic winery in Alto Adige. Kettmeir is located in the area of Caldaro and manages approximately 50 hectares of vineyards in various areas of the Alto Adige region. The Pinot Bianco, Chardonnay and Pinot Nero grapes come from company vineyards cultivated on the high hills of Oltradige and Bassa Atesina, at an altitude between 380 to 700 metres above sea level. The climate is cool, characterized by significant temperature variations between sunny days and cold nights. The soils are predominantly calcareous, with the presence of clay and very rich in skeleton. At the end of the harvest, the grapes are subjected to refrigeration for one night and then to the vinification, which takes place separately for each grape variety. - run must ferments in stainless steel tanks at a controlled temperature. The base wines mature in steel until the following spring, when the final cuve is created. The second fermentation takes place in the bottle according to the Classic Method, with a refinement on the yeasts for at least 40 months.
- The Pas Dos Classic Method by Kettmeir is a sparkling wine with a vertical, taut and austere, ideal for those who love above all the clear mineral freshness. In the glass it presents itself with a straw yellow color with light golden reflections and a thin, delicate and persistent perlage. The bouquet is elegant and refined, with citrus fragrances, nuances of white flowers, aromas of white pulp fruit, green apple , peach, hints of aromatic herbs, dried fruit, bread crust, light notes of ginger and white spices. On the palate it is intense and rich, with a creamy and savoury sip, which extends deep and essential towards a dry, very fresh and persistent finish.
