- The Sagrantino di Montefalco by Roccafiore winery is the symbolic wine of Umbria. It is a structured, intense, rich and powerful red, made with an ancient vine cultivated for centuries in the Montefalco area. At one time, Sagrantino was mainly intended for the production of sweet dessert wines. For several decades it has been rediscovered as a great red wine for aging and has carved out a prominent place for itself in the Italian wine scene. Due to its particular characteristics of tannins, it is a wine that requires long refinements in wood before reaching the right expressive harmony. At the table it pairs splendidly with braised meats, stews and game.
- Roccafiore Sagrantino comes from the vineyards cultivated in the hilly territory that surrounds the small and historic Umbrian village. The vines are trained using the spurred cordon system, with a planting density of 5000 vines per hectare, for an average production per hectare of around 70 quintals. The clay
- limestone soils, the cool and continental climate, have proven to be perfect for the demands of Sagrantino, which is grown almost exclusively in Umbria. Sagrantino is a late variety and the harvest usually takes place in the first weeks of October, depending on the climatic trend of the year. Fermentation takes place in stainless steel tanks at a controlled temperature, using only indigenous yeasts and maceration on the skins for about ten days. It rests for 18 months in French barriques and large 50
- hectoliter Slavonian oak barrels and completes the long period of refinement with at least another 6 months in the bottle before being put on the market.
