Lo Zoccolaio cultivates 30 hectares in the splendid territory of the Langhe, with plots in particularly renowned areas. The Nebbiolo grapes come from vines of about 30 years of age cultivated in the Ravera cru of Novello, at an altitude between 320 and 400 meters above sea level, with exposure to the south-east. The soils, composed of calcareous-clayey marl and the mild climate, allow for the harvesting of ripe grapes rich in perfumes and aromas. After destemming, fermentation takes place in stainless steel tanks at a controlled temperature of 28 °C, with maceration on the skins for approximately three weeks.
