Aux Perdrix is a premier cru vineyard in the Nuits-Saint-Georges appellation. The plot, about 3.5 hectares, is almost entirely owned by one producer: Domaine des Perdrix. The vines were planted between 1922 and 1980. They are located on a gentle slope with a southeastern exposure south of Nuits-Saint-Georges. The grapes are picked by hand and extensively sorted. A cold peel soak of 4 to 6 days follows to extract the phenolic compounds. The grapes are then destemmed and subjected to another 15 days of skin soaking. The alcoholic fermentation takes place spontaneously, after which the press and aging wines are separated and aged separately. The wine is aged in traditional Burgundian 228 liter barrels for 15 to 18 months, 40% of which are new. The Perdrix Nuits-Saint-Georges Aux Perdrix Premier Cru has an elegant taste with good acidity and freshness, soft red fruit, soft tannins, cream and subtlety. The scent of the Nuits-Saint-Georges 1er Cru 'Aux Perdrix' is an excellent, beautiful intense pinot noir, typified, soft fruit, cherries, strawberries, nice broad and subtle, vanilla, smoky.
