The pinot blanc grapes used for this beautiful wine are hand-picked with the utmost care at perfect ripeness. In the vinification cellar, the entire bunches are pressed very carefully and a spontaneous alcoholic fermentation with wild (grape-specific) yeasts is allowed to take place in large old oak casks. After approx. 8 months of maturation, the wines are bottled without fining or filtering. This entire process follows strict biodynamic rules and regulations. Domaine Weinbach, also known as Clos des Capucins, is not only one of the best domaines in Alsace, its refined and concentrated white wines are even considered to be among the best in the world.
