- The "Sanct Valentin" Sauvignon is a great territorial wine, born in one of the most important realities of Alto Adige. San Michele Appiano winery is a cooperative made up of 350 members who manage 360 hectares of vineyards, producing wines of excellent quality. The grapes used to make this prestigious version of Sauvignon Blanc come from selected vineyards, ranging from 10 to 30 years old, located in the hilly area above San Michele and Appiano Monte, at an altitude between 450 and 600 meters above sea level, with exposure facing southeast. The soils are gravelly, with a high content of limestone. The harvest takes place manually towards the end of September. After soft pressing, 75% of the must ferments in stainless steel tanks, while the rest in oak tonneaux. After 6 months of aging on the lees, the final blending and bottling take place.
