The grapes intended for the production of the Cortazo grow in the vineyard "Brenntal" in Cortaccia, known as one of the warmest areas in Alto Adige, but due to the altitude this leads to very good day and night temperature differences and then the connoisseurs know that this is an important condition for good wine. Maturation and fermentation in the tank lasts 14 days. The wine then ages for 12 months in small oak barrels.
