The base wine for the Hollick Sparkling Merlot is fermented as usual for dry red wine, and matured in two-year-old French and American oak for eighteen months prior to re-fermentation. The resultant wine is liquered to a predetermined sweetness upon final packaging, and is recommended for further bottle maturation.
