A highlight of the superb terroir of Jamaica with an exceptional rum aged in bourbon barrels
This Jamaican single cask is the result of a long fermentation and a distillation entirely in pot still.It is aged in old bourbon casks for 10 years. It is then reduced and bottled in the Hee Joy cellars in Chevanceaux, in the Cognac region. The secondary ageing in Charente is done in old Cognac XO barrels, for about 6 months.
