Jacquemart handcraft a miserly 90,000 bottles of Champagne annually, all aged sur
point. Each bottle spends 12
months on lees horizontally – the lees then riddled and consolidated in the neck and the bottles vertically restacked nose to punt in the cellar to reduce the lees exposure to the cuvee. The Champagne then left to age a further 3
years on lees sur
point to build texture, body, and finesse whilst depowering the heavier characters derived from prolonged lees aging. The big houses producing 10's of millions of bottles cannot pragmatically craft Champagne in this way… yet you pay no more for this next level Ployez
Jacquemart Rose Brut stunningly made in an Extra Brut style with a beautifully refreshing 4gms residual sweetness… major commercial brands are circa 8
12gms residual. The house only makes a Rose in the years when the black grapes are of especially high quality, the wine a blend of their Extra Quality Brut house Champagne with red wine Champagne aged in oak casks (allowing them to perfectly control the colour). A blend of 37% Pinot Noir, 13% Pinot Meunier and 50% Chardonnay, colour coming from 10% still Avenay Pinot Noir aged in oak barrels.
