Like all wines from Bodegas Canopy, this is absolute Value for Money. The 2009 Kaos is produced with Garnacha grapes from two vineyards in Cebreros which is situated on a slate soil. The grapes are fermented in clusters with native yeasts in open 1500 liter barrels and then the wine is aged for 18 months in 500 liter oak barrels. The technique of clustering parcels in a vineyard and then combining them into the right taste that the winemaker wants to obtain is a technique that is also used by Bodegas Pujanza , among others. Like all wines from Bodegas Canopy, these are completely organically grown and produced, so no chemicals, fertilizers or addition of sulfites.
