Domaine Rolet, founded in 1942 by Desire Rolet. A premier Jura winery in France. The estate is currently managed by Desire's four children: Pierre, Eliane, Guy and Bernard. This trousseau from AOC Arbois is made from grapes grown on the slopes of "Chagnon" and "Leuvrin" in Montigny-lès-Arsures and "Montesserin" in Arbois. After harvesting, the grapes are destemmed and fermented spontaneously. After fermentation, the wine matures for 8 months in oak barrels. The result is a light ruby red, silky wine with aromas of red fruit and a light spicy touch. In the nose aromas of strawberries, raspberries and a light pepper touch. In the mouth a soft attack, lots of red fruit in the taste, large volume, juicy and elegant structure with supple tannin. Delicious with steak tartare (or a faded version with beets). Also delicious with duck breast.
