They themselves call their place a paradise and we understand that. Creation's vineyards are located on a plateau in the scenic Hemel-en-Aarde Valley in the Walker Bay wine district. Thanks to its proximity to the Atlantic Ocean, the climate here is mostly cool. The grapes are given time to ripen slowly and thus retain their fresh acidity. After fermentation, the wine matures for ten to twelve months in oak barrels, 25% of which are new. The wine is lightly filtered (to lose as little flavor as possible) and then bottled. The end result may be there. A fruity Pinot Noir with supple tannins and subtle notes of wood aging.
