In May 1893, Irma de Montigny, a seductive courtesan, entered a small bistro located at 3 rue Royale. This place had been opened a few days earlier by Maxime Gaillard, a waiter. The legend of Maxim's began then, this restaurant very quickly becoming the "gallant" meeting place of the Belle a‰poque.
It gained its worldwide fame at the 1900 Universal Exhibition in Paris, when its maa®tre d'hetel Eugene Cornuche transformed it into a veritable temple of Art Nouveau , which today earned it the classification of " Historic Monument of France ".
