Difese, an IGT Tuscan wine, has been produced by Tenuta San Guido since 2003. The blend is 70% Cabernet and 30% Sangiovese. Fermentation takes place in temperature-controlled steel tanks with maceration that lasts around 12 days for Cabernet Sauvignon and Sangiovese. It is then aged for 12 months in French and American oak barrels and then for three months in bottle. The wine is characterized by its good structure and its extreme sweetness which make it extremely pleasant.
