This label was born in 2008 as a new challenge for the winery, the challenge of creating a great Trento sparkling wine from only Pinot Noir grapes. In fact, traditionally the best Trentodocs are produced with pure or predominantly Chardonnay, with Pinot Noir, Pinot Meunier and Pinot Blanc, other varieties permitted by the regulations, often relegated to a marginal role._x000D_ _x000D_ Abate Nero 'Domini Nero' Spumante Trento Brut is a 100% Pinot Noir grown in the cool climate of the area of the province of Trento. After the harvest, the bunches are transferred to the winery and vinified in white in the traditional way through soft pressing and alcoholic fermentation in stainless steel tanks. Subsequently, the sparkling base is bottled and tirage syrup is added for the second fermentation according to the Classic Method, combined with at least 60 months of refinement on the yeasts. Once the sur lie period is over, the disgorgement and the subsequent Brut dosage are carried out._x000D_ _x000D_ Upon visual analysis, the Trento Spumante Brut 'Domini Nero' from the Abate Nero winery expresses a bright straw yellow color with a very fine and persistent effervescence. The aromatic spectrum is refined, described by sensations of white peach and small red fruits that are accompanied by delicate hints of mountain herbs and mineral hints. Fragrant aromas of yeast and bread crust complete the olfactory context.
