The winemaking reality L'Opificio del Pinot Nero was born from Marco's desire to create an important and complex sparkling wine that follows the trail of the great Champagnes. In fact, the intuition came in the winter of 1997 just as Marco was tasting an old Champagne Blanc de Noirs, which bewitched him to such an extent that it pushed him to start this beautiful winemaking project based on Pinot Noir in the Colli Vicentini._x000D_ _x000D_ ™Opificio del Pinot Nero di Marco Buvoli Spumante Metodo Classico Extra Brut €˜Super Sei is a pure Pinot Nero from vines grown according to the principles of organic and biodynamic agriculture. Once the grapes has reached the ideal degree of ripeness, we proceed with manual harvesting and careful selection, followed by delicate pressing. Alcoholic fermentation takes place in stainless steel tanks at a controlled temperature thanks to the intervention of indigenous yeasts only and, after a short maturation period, the cuvée is assembled with the addition of wines from previous vintages, partly worked in wood according to the Solera Method. The mass is then bottled for the second fermentation according to the Classic Method, with at least 72 months of refinement on the yeasts. Finally, after the dgorgement the wine is dosed Extra Brut._x000D_ _x000D_ Buvoli 'Super Sei' Spumante Metodo Classico Extra Brut has an intense straw yellow color with golden reflections and an elegant perlage. On the nose, hints of ripe apple, citrus peel and jasmine are perceived, embellished with hints of pastry. and sweet spices.
