Blend of three red and white grape varieties that is produced only in particularly favorable years, to give enthusiasts a label of undoubted quality. The aromatic profile on the nose is complex and worthy of careful analysis, while on the palate you can perceive a fresh sip of excellent composition. A bottle that opens an interesting scenario on the production of Classic Method in southern Italy, therefore to be tried to make the necessary comparisons with other Italian areas historically more established for the production of bubbles. These grapes are grown near San Severo, at about 80-100 meters above sea level. The territory, which enjoys a southern and south-western exposure, is mainly composed of limestone and clay. The must ferments for the first time in steel, and then referments again in the bottle, as dictated by the production principles of the Classic Method. The Spumante remains on the lees for 48 months and the subsequent disgorging phase is carried out manually, with the subsequent addition of dosage syrup._x000D_ _x000D_ The Spumante Metodo Classico Brut Gran Cuve “XXI Secolo” announces itself to the eye with a bright straw color, illuminated by some reflections tending more towards gold, clearly visible in the nail. Full and deep on the nose, where aromatic hints alternate with touches of pastry and yeast, enriched by pleasant more honeyed hints. In the mouth it is of excellent body, round, with a soft sip that leverages a pleasant freshness, which enhances the persistence of the drink, characterized on the finish by a pleasant hazelnut taste.
