- The Pinot Noir €˜Petrosus€ ™ is a wine French red, soft and crunchy at the same time made by the artisan vigneron Yvan Bernard. We are in Auvergne, precisely in the municipality of Montpeyroux, where Yvan has embraced a genuine and sustainable production philosophy. The term "petrosus" comes from Latin and translates to "stony", "rocky", in reference to the characteristic abundance of stones that characterizes the vineyards in which the grapes destined for this label grow.
- Yvan Bernard 'Petrosus' Pinot Noir comes only from grapes of the homonymous vine of Burgundian origin, grown in accordance with the principles of organic and biodynamic agriculture. The plants, about 30 years old, rest on granite soils rich in stones. The harvest is done entirely by hand and the bunches are then transferred to the cellar for spontaneous alcoholic fermentation which takes place between steel tanks and fibreglass vats thanks to the presence of indigenous yeasts. The subsequent maturation period also takes place in the same types of wine containers, thus excluding the use of wood as Yvan does not want to alter the expression of the terroir. The mass is finally bottled without undergoing any clarification or filtration.
- In the glass, the Pinot Noir Yvan Bernard €˜ Petrosus displays an intense garnet red coat. Aromas of cherry and currant characterize the nose, enriched by floral and mineral hints and faint balsamic echoes. The taste reveals notable structure and fine cleanliness, as well as taut freshness and soft tannins. An expression of Pinot Noir faithful to the varietal characteristics, defined however by the unique minerality due to the singular pedological composition of the vineyards.
