- quality sparkling wines. The Vallagarina area, with its cool and temperate climate, the notable temperature variations between day and night, and the poor and rocky soils, confirms its vocation for making excellent sparkling wine bases from Chardonnay and Pinot Noir grapes.
- The Trento Spumante Brut "Riserva del Fondatore 976" comes from a careful selection of the best vineyards, only in years in which particular climatic conditions can guarantee the right concentration and aromatic richness. The obsessive attention in the vineyard and the management with low yields per hectare, allow us to bring ripe and highly balanced grapes to the cellar. After the harvest and the soft pressing, the free
- run must of each individual plot is sent to fermentation. Only after a few months of maturation is the cuvée created, made up of equal parts Chardonnay, which guarantees finesse and elegance, and Pinot Noir, which gives the blend character and structure. The second fermentation takes place in the bottle, with a period on the lees of 96 months. The choice of dgorgement tardif, or a disgorgement split over time, allows for sparkling wines with a very fresh and fragrant profile, despite the long evolution sur lattes.
