- This Pinot Noir Bourgogne is made by the Louis Latour winery starting from the bunches of a vine that, in Burgundy, finds some of the most interesting expressions, the Pinot Noir. The plants of this variety have an age that is around 25 years, and grow in vineyards characterized by a calcareous and clayey subsoil. The grapes are harvested strictly by hand during the harvest phase and the juice is fermented in stainless steel vats, and, still in steel, it is then left to complete the maturation process, for a period of between 10 and 12 months.
