- This Franciacorta Brut "Cru Perdu" is made by the Castello Bonomi winery by adding 30% Pinot Noir to 70% Chardonnay. The vines of these varieties grow on the slopes of Mount Orfano, in the southernmost part of the DOCG borders, at about 275 meters above sea level. After harvesting, the grapes are softly pressed, carrying out the first fermentation in steel, to then referment, following the production rules of the Classic Method, in the bottle, where the wine matures on the yeasts for 36 months. At the end of this period, the disgorging, dosing and bottling operations take place.
