Benoit Gouez is the great name behind the creation of the "Champagne Demi
sec Ice Imprial", the expert chef de cave of the renowned grande maison of Epernay. The blend involves the union of the three classic grape varieties that have made the region's bubbles famous, each vinified in such a way as to balance the blend and in function of the decisive dosage of 45 grams of sugar per litre. A majority of Pinot Noir provides the structure and the right edges, with distinctly fruity aromas; the Meunier reveals its peculiar evolved and fleshy character, capable of giving a rich and melting sensation to the palate, while the last part of Chardonnay is decisive for the notes of marked freshness and the touch tending to aromatic. The use of vins de reserve up to about 30% is specifically sought to enhance the intensity and richness of this elaboration, making it particularly coherent. The color is intensely golden and the bouquet is distinctly fruity and ripe, tropical and vigorous: the sip is an ecstasy of pulpy flavors that recall jams, combined with the intriguing citrus pungency of grapefruit and ginger.
