After soft pressing, the fermentation of the must occurs spontaneously thanks to the presence of indigenous yeasts , and it takes place in wood. Malolactic fermentation is not carried out. Refermentation, as dictated by the production principles of the Champenoise Method, takes place in the bottle, where the Champagne then remains to refine on the lees for three years.
