- The “Distillery Collection N° 1 Single Kettle Batch” Diplomatico is a Rum that originates from the distillation of molasses and the pure juice of different species of sugar cane. The fermentation of the molasses lasts for 18 hours, while the pure juice is fermented slightly longer, for 48 hours. The distillation then takes place, using a still that operates according to the discontinuous method, according to the Batch Kettle system of Canadian origin. Once the processing is completed, the Rum is matured for 6 years in American white oak barrels, previously used to mature Bourbon.
