The Cabernet Sauvignon, Merlot, and Syrah vines are cultivated in the Bolgherese amphitheatre on soils of rather a heterogeneous origin, predominantly alluvial matrix, characterized by the presence of sand, silt, clay, and abundant skeleton. The three grape varieties are harvested and vinified separately, following the different ripening periods. After destemming, soft pressing is carried out with brief contact with the skins to extract all the aromas. Fermentation is carried out in steel tanks at a controlled temperature of 16 °C.
