- The Crmant d'Alsace Brut 'Equinoxe' from Domaine Aim Stentz is an excellent Classic Method of great elegance and freshness, made by an Alsatian estate that produces excellent wines with passion and craftsmanship. It is a harmonious blend, combining the structure of Pinot Noir with the refined fruitiness of Pinot Blanc. The fragrant varietal notes of the noble grapes are enriched by evolved tertiary aromas resulting from a long maturation sur lattes. A cuve with a strong, intense, persistent personality is ideal for enjoying a fish menu.
- "Equinoxe" is a Crmant d'Alsace Brut and represents one of the spearheads of the range of labels from Domaine Aim Stentz, which specialises in small productions that faithfully reflect regional traditions and the authentic character of an extraordinary terroir. The estate covers 14 hectares, cultivated according to organic farming principles. The name of the sparkling wine is not accidental. The grapes are traditionally harvested on the day of the autumn equinox. The vineyards are located in hilly areas characterised by the presence of valuable limestone
- clay soils. Soft pressing of the grapes is followed by fermentation in temperature
- controlled stainless steel vats. According to the Metodo Classico, secondary fermentation takes place in the bottle, with a rest on the lees for 36 months before dgorgement.
