BIANCO FRIZZANTE 'ANFORA' MAGNUM CASA BELFI DESCRIPTION_x000D_ _x000D_ _x000D_ The Bianco Anfora by Casa Belfi is a sparkling white wine characterised by the almost ancestral use of the clay container as a fermentation container. A production choice pursued by the winery linked to environmental reasons and the expressive essentiality of the wine._x000D_ _x000D_ The white grapes that make up this wine come from vineyards located on medium-textured soils, with a stony and well-draining subsoil. The philosophy pursued is both biodynamic and certified organic. The grapes are destemmed and placed in large terracotta amphorae. The container is active, not inert, and interacts with the wine mass, giving off some characteristics that will be revealed when tasting. Inside the amphora, maceration on the skins takes place for about 7 days, followed by soft pressing and fermentation will begin using only indigenous yeasts, without temperature control. It is bottled on flower days, according to Maria Thun's lunar calendar, and undergoes a refermentation in the bottle. It is not dosed, nor filtered, nor clarified._x000D_ _x000D_ The Bianco Anfora has a very deep straw yellow color, with a subtle effervescence. Rich, intense and slightly iodine-like aromas emerge on the nose, of yellow fruit and citrus balanced by nuances of bread crust. On the palate it is vibrant, rough, typical of maceration, but very balanced. There is an excellent structure and the mineral sensation, due to the active contact with the amphora, sweetens and does not sting, giving pleasantness.
