Starting from this heritage of historical knowledge, combined with a passion for the world of Japanese flora, Gins of extraordinary finesse are born, still produced in small batches, which delight connoisseurs and the most attentive enthusiasts._x000D_ The Kyoto Distillery's "Ki No Bi" Gin is a splendid excellence of the Land of the Rising Sun. The process of preparing the Gin starts from a refined alcohol obtained from rice, according to the most ancient Japanese traditions, which derive from the centuries-old experience in the production of sake. A slow and patient phase of infusion and maceration of the botanicals follows, in order to extract all the precious aromas of herbs, roots, plants and berries. The selection of ingredients has been curated with great knowledge of classic Gin, choosing the best of what Japanese flora can offer. The botanicals are divided into six large families: the basic ingredients, such as juniper, iris, Hinoki wood; the citrus fruits of yellow and lemon Yuzu; the herbs of Kinome shoots and green pepper Sansho; the spices represented by ginger; the flowers and fruit with bamboo and sisho leaves and finally the inevitable Gyokuro green tea. The six groups of botanicals are distilled separately, in order to create homogeneous bases characterized by clear expressive purity. Only at a later stage is the assembly carried out, in order to obtain the perfect harmony. On the nose it conquers with fine and delicate aromas of white flowers, citrus peel, fragrant hints of lemon, nuances of medicinal herbs on an enveloping balsamic background of juniper berries.
