This panettone is the great classic of the Italian pastry chef Biasetto.

It is rich in candied peel at low temperatures to preserve the precious essential oils and maintain the sweetness of the orange pulp. They are accurately balanced with sultanas and Tuscan acacia honey, all glazed with a sweet almond macaroon and covered with whole almonds from Puglia.
