It's pretty rare to see a Recently Disgorged Sparkling Wine in NZ and especially one that is from 2013, that's over 10 years on the yeast lees in the bottle, wow….. Traditionally NV Champagne is ages 18months on lees, but Nautilus Cuvee is standardly aged 36months. Typically, they disgorge the wine 3
4 times a year with the aim of the wine having 6
18 months on cork when in the market. Once the wine is taken off its yeast lees and sealed with a cork, it will age more rapidly and start to take on more ‘bottle age' characters such as toast and brioche. Conversely if a wine is aged for a longer period on yeast lees, it will age more slowly and develop more complexity while retaining fineness. Nautilus do also retain library stock and disgorge after an extended period of time on yeast lees, they call it ‘late disgorged'. Their library stock of 2013 Recently Disgorged impressed them so much they decided to share it with us, how lucky are we!!!! This is one Limited Release you do not wish to miss out on.
Smells
A heady bouquet of red wild berries, raspberries, strawberries, and hints of cranberries intertwined with toasty brioche, the more you breath deeply from the glass the more the delicious toasty creamy, sourdough and wheat biscuits notes shine as a result of the extended lees ageing.
