The maree haute or eau de mer is an unfiltered and single cask XO cognac that during its maturation is soaked with sea water, in order to "drop" its alcohol levels to 43%. But it is also done for another reason; to resemble the older days, when casks of brandy traveled in the holds of ships and came into contact with the sea in storms.
