It is excellent to taste throughout the meal, with fish menus, fried foods, fish in a salt crust or baked.
- The Brut Alta Langa by Cuvage ¨ the expression of a terroir that is establishing itself in the Italian panorama as one of the most interesting in absolute terms for sparkling wines. The Pinot Noir and Chardonnay grapes come from the Monferrato area, more precisely from the wonderful hilly area that goes from Strevi to Castino. The vines have an average age of about 25 years and are cultivated at an altitude of about 450 meters above sea level, on very suitable soils, composed of marls characterized by a high percentage of limestone. The harvests take place slightly early, between the end of August and the beginning of September, with collection and selection in vineyard, so as to bring only perfectly healthy bunches to the cellar. The grapes are vinified separately, with soft pressing and subsequent fermentation in stainless steel tanks at a controlled temperature. After a few months of refinement, the assembly and second fermentation take place, which takes place in the bottle according to the Classic Method, with a rest sur lattes of approximately 36 months.
- The Classic Method Cuvage Alta Langa Brut is a sparkling wine of excellent quality, dedicated to those who prefer the classic taste, which focuses above all on the clear floral and fruity freshness. In the glass it presents itself with a luminous light yellow color with brilliant golden reflections. The perlage is of remarkable delicacy and persistence. Fine and elegant, it offers a bouquet characterised by scents of white flowers, orange blossom, ripe citrus fruits, apple, white peach, hints of redcurrant, bread crust and toasted dried fruit. Intense and harmonious, it stands out on the palate for its rich and ripe fruit, which anticipates a finish characterised by a lively mineral freshness and a pleasantly savoury finish.
