Sardines are like good wines, they get better with age! Indeed, the oil in which they are preserved confit the flesh of the sardine. This is why we talk about vintage for sardines._x000D_

The sardines are fished off Saint-Gilles-Croix-de-Vie, the only sardine port recognized as a Remarkable Taste Site. All fresh, they are sent the same day to the cannery, where they are sorted, cut and put in cans, one by one, by hand by the sardine fishermen. Covered with extra virgin olive oil, they can be kept for 10 years or more in their beautiful boxes, during which time they will mature in the oil, the central bone melting into the flesh._x000D_

In order to enjoy a homogeneous candied product, it is recommended to turn the tins over every 6 months or so, so that all the flesh is bathed in oil._x000D_
