Located on the coast of Hokkaido, Japan's northernmost island, Yoichi is Nikka's first distillery. Its whiskies are produced using traditional processes, such as direct toasting over coal fires. The result is malts with an authentic character, typical of this exceptional place with their marine and fine peaty flavours.As the 90th anniversary approaches, Nikka has launched a Discovery range that reveals a key stage in the creation of its Yoichi and Miyagikyo single malts each year. The 2022 edition puts yeast in the spotlight. This third ingredient, which is essential to the production of single malt, along with malt and water, is rarely mentioned by distilleries.
