Stout beer and dark chocolate mix flavours of dark roast, malt, and molasses – all the great qualities of a chocolate cookie. And oh the crunchy, candied pecan bits…an essential detail that adds lightness to the dark, creamy texture.
Incidentally, while workshopping this cookie, we offered a taste to two young sisters (Phoebe and Thalia) who came to visit the “Cookie Fairy” at TFC. They both agreed: “These are good!” With that, we officially added them our menu. Ingredients: Stout beer, bittersweet chocolate, white sugar, white chocolate, all purpose flour, unsalted butter, unsweetened dark cocoa, eggs, espresso powder, salt, pecans.
