- Sarpa€ is the true essence of every Grappa: it is the pomace in the Vicenza dialect, or the skins, the stalks and the grape seeds, all that material from which we start to obtain a spirit richly endowed with aroma and pleasantness. The idea for this creation was born in 1983, but it took Jacopo Poli a few years to perfect it and finally bring it to light: Sarpa represents the distillate that combines the tradition of artisanal production with a more contemporary and balanced expression, avoiding those classic defects of pungency and aggressiveness that inevitably characterized the grappas of the past.
- Jacopo Poli offers two versions of what he has defined as his classic Grappa. Both labels originate from the pomace of the most classic of Bordeaux blends, with the presence of Cabernet Sauvignon, Merlot and Cabernet Franc: vines that have been present in the Veneto region for a very long time and which therefore constitute, although recognized as international, a deep
- rooted winemaking tradition. “Sarpa” is a young Grappa made in small batches and artisanal distillation, using a copper still with discontinuous cycle steam boilers. It is authentic and straightforward, characterized by aromas of red grapes and berries, with a light shade of pink. “Sarpa Oro” was born in 1991 and represents the idea of evolution of a classic Grappa. Produced in a limited edition, always using a copper still with discontinuous cycle steam boilers, it spends at least 4 years in 225
- liter French oak barriques, in the ideal atmosphere of underground cellars. It is characterized by the impetuous aromas of exotic fruit, nuances of vanilla and hints of toasted almonds and hazelnuts.
