It'S Fresh And Lively On The Palate, With Good Flavour And A Crisp, Dry Finish. Chip Dry Is Delicious Served On Its Own, Chilled Or Over Ice. It'S Also At The Centre Of The Classic Portuguese, Port And Tonic Cocktail, Made With One Part Chip Dry And Two Parts Tonic Water, With A Slice Of Lemon And A Sprig Of Mint. An Original And Refreshing Alternative To A Gin And Tonic. Taylors First Created This Dry White Aperitif Port All The Way Back In 1934. With A Devoted Following All Over The World, Chip Dry Is Made From Selected Dry White Ports Produced From Grapes Grown In The Eastern Area Of The Douro Valley, Known As The Douro Superior. Several White Grape Varieties Are Used In Production, With The Malvasia Fina Grape Variety Being Predominant. Chip Dry Is Produced Using The Traditional Port Wine Vinification Method. Brandy Is Added To The Must To Halt Fermentation And To Preserve The Grape'S Natural Sugar In The Finished Wine. With Chip Dry, The Brandy Is Added Later In The Process, When Much Of The Sugar Has Been Converted Into Alcohol, Producing A Port Of Unusual Dryness. The Individual Wines Are Matured Separately In Oak Vats For Between Four And Five Years And Are Then Blended Together Shortly Before Bottling To Give Both Balance And Character. The Name Of This Port Is Inspired By The Classic Old English Expression 'Dry As A Chip'.
