'Pacina' is a Tuscan red wine with a majority Sangiovese base that bears the name of the artisan winery that produces it, faithfully expressing the aromas and flavors of the Chianti area of the province of Siena. - Pacina is the red wine that best fits the idea of wine proposed by Giovanna Tiezzi, an energetic and symbolic producer of the world of artisanal wines, so much so that it bears the name of the winery. We are in the province of Siena, in Castelnuovo Berardenga, a small village nestled in the scenic Tuscan hills on the border with Chianti Classico. Here stands Pacina, an ancient convent where for five generations wine has been made almost by letting it be made, with respect for the land and biodiversity: Giovanna and Stefano want the land and vines, grapes and aromas to be those that time has always been carried with it in this generous and wonderful land. They felt the need to maintain and recreate what is in the roots.
- Pacina is a red wine composed mainly of Sangiovese, with small additions of two other typically Tuscan vines, Canaiolo and Ciliegiolo. The Pacina vineyards, surrounded and enriched by olive groves, woods and crops, extend for 10 hectares and the plants are from 10 to 38 years old. The soil on these hills is composed of both sand and clay. , to indicate the border between Chianti and the Crete Senesi. The cement tanks in the cellar host the alcoholic fermentation with indigenous yeasts for six weeks, followed by malolactic. The refinement takes place in Allier oak barrels for 14 months and the bottles are not released on the market for another 18 months.
- Pacina is a red wine with all the character that Tuscan Sangiovese can express. Once poured, it presents itself with a beautiful ruby red with bright and sunny tones. Intense aromas linked to ripe red fruit rise from the glass, in which blackberries and plums. The olfactory texture is enriched with orange peel and hints of Mediterranean scrub herbs and bucolic references. Hints of damp earth and humus also rise up, a strong reference to the soil and roots that they are so proud of in Pacina. In the mouth it roars with its important and expressive tannins, but at the same time it embraces and envelops with its freshness and flavor.
