The domaine Paul Prieur Sancerre LLan Mont Damne is a special edition of the beautiful Sancerre of Paul Prieur & Fils. Of course made from Sauvignon Blanc from the Loire but coming from a special selection. The matures in stainless steel for several months "Sur Lie" before being bottled. "Sur lie" is the French term for aging the wine on the fine lees. This is the sediment of dead yeast cells, but without remnants of shells, leaves, stems, flesh, and other 'dirt', or the coarse dregs. This way of producing does take a lot more time, but it does ensure that the wine gets more body, more structure and a nicer aromatic complexity. Maturation on the dregs of dead yeasts also results in slower and more controlled maturation as the yeasts bind the oxygen in the wine. The Domaine Paul Prieur Sancerre Blanc Monts Damnes is a gourmet wine. Complex and mineral with notes of green herbs, citrus, pineapple and flint. The aftertaste is endless! Delicious with grilled prawns with coriander and pink grapefruit, oysters with a salsa of cucumber and citrus fruit, or with steamed lobster with herb butter and a touch of pastis.
