This beautiful deep red, almost black cherry red, colored Primitivo del Salento igt 'Mocavero' is, as the name suggests, made from 100% Primitivo grapes. In recent years, Primitivo has become one of the grapes of the Italian south, especially on the Adriatic side, in the Apulia region (also called Puglia). The Primitivo in this case comes from the provinces of Lecce, Brindisi and Taranto. The grapes here have a tasteful and intense character, without becoming bland, they know how to keep their acidity and minerality. But fermentation and upbringing are also very important for this. As the wine easily becomes too firm, it is essential that it is brought into contact with the air during fermentation to soften the tannins. After maceration, the must is separated from the marc and fermentation takes place in stainless steel vats. The grapes have a very intense character, partly due to the age of the vines, which averages 35 years. Part of the wine is further refined by aging in barriques for four to five months, after which this part is mixed with the wine that has been in stainless steel. In the mixture, the accent remains on the fruit, with refinement and nice tannins.
